Next:
1. Cut chicken into 1 inch chunks 2. Combine soy sauce, lime juice, garlic, ginger and red pepper flakes in a bowl setting 3 tablespoons mixture to the side; cover and refrigerate. Add water to remaining mixture and pour over chicken. Cover; marinate in refrigerator at least 30 minutes or up to 2 hours. 3. For peanut sauce, combine coconut milk, 3 tablespoons reserved soy sauce mixture and peanut butter in small saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and simmer about 5 minutes. 4. Reserving the marinade, drain the chicken and place on a skewer, alternating with the green onion, brush with reserved marinade just before placing on the cooking surface. Discard any unused marinade at this point. 5. Grill until chicken is no longer pink and serve with warm dipping sauce
**TIP**Soak bamboo skewers in water for 20 minutes before grilling. This will help to prevent the skewers from burning.
----Gorgonzola, Apple & Glazed Walnut Salad----
Dressing: 1/2 c. salad or olive oil 2 tbsp. each white wine vinegar and lemon juice 2 tsp. Dijon mustard 1/8 tsp. salt Dash of pepper
Salad: 2 large tart green apples 1-2 lg. head romaine or green leaf lettuce, washed and crisped 1 Cup crumbled Gorgonzola or other blue-veined cheese 2/3 Cup glazed walnuts (or pecans)
In a medium-size bowl, combine oil, vinegar, lemon juice, mustard, salt and pepper; mix until well blended. Set aside.
Just before serving, core and thinly slice apples. Tear lettuce into bite-size pieces. In a salad bowl, combine lettuce and apples. Mix dressing again; pour over salad and mix lightly until well coated. Sprinkle salad with walnuts and cheese. Serve immediately. Makes 6 to 8 servings.
**TIP**To keep apples from turning brown, soak them quickly with a little lemon juice just before adding to the salad. Give the dressing a little sweetness by adding some fresh squeezed orange juice.
